- 2 medium chicken breasts (about 1 pound), sliced
- 8 ounces spaghetti or linguine
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 lemon, juiced and zested
- 1 cup chicken broth (low sodium)
- ½ cup heavy cream (optional)
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Prepare the pasta. Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
Cook the chicken. Sear seasoned chicken strips in olive oil until golden and cooked through. Remove from skillet. - Make the sauce. Sauté garlic, then stir in lemon juice, zest, and chicken broth. Simmer for 3 minutes. Add cream for a richer sauce, if desired.
- Combine everything. Toss pasta and chicken in the skillet with the sauce, adding reserved pasta water to adjust the consistency.
- Finish and serve. Sprinkle with Parmesan and parsley. Serve warm.
Notes
- Use fresh lemons and garlic for the best flavor.
- To lighten the dish, skip the cream and use more broth.
- Store leftovers in an airtight container for up to 3 days.
