For the Chicken & Potatoes:
- 2 large chicken breasts, boneless & skinless, cut into bite-sized pieces
- 3 medium Yukon Gold potatoes, diced into small cubes
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper flakes (optional)
For the Garlic Parmesan Sauce:
- 3 cloves garlic, minced
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese (plus extra for topping)
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- ¼ teaspoon ground mustard (optional)
- Fresh parsley, chopped, for garnish
Instructions
Sauté the potatoes.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add diced potatoes, season with salt, pepper, and smoked paprika.
- Cook for 10-12 minutes, stirring occasionally, until golden brown and tender.
- Remove from the skillet and set aside.
Cook the chicken.
- Add the remaining 1 tablespoon olive oil and 1 tablespoon butter to the skillet.
- Add chicken pieces, season with Italian seasoning, onion powder, and red pepper flakes.
- Cook for 5-6 minutes, until golden brown and fully cooked.
- Remove from the skillet and set aside.
Make the garlic Parmesan sauce.
- Reduce heat to medium and add the remaining 1 tablespoon butter to the skillet.
- Stir in the minced garlic, sautéing for 30 seconds until fragrant.
- Pour in the heavy cream, Parmesan cheese, and dried thyme.
- Stir continuously for 2-3 minutes until the sauce thickens.
Combine everything.
- Return the cooked chicken and potatoes to the skillet.
- Toss in the garlic Parmesan sauce, coating everything evenly.
- Let it simmer for 2-3 minutes for the flavors to meld.
Garnish and serve.
- Sprinkle with extra Parmesan cheese and fresh parsley.
- Serve hot and enjoy!

- For crispier potatoes, avoid stirring too often while cooking.
- For a low-carb version, replace potatoes with cauliflower or broccoli.
