For the Chicken & Potatoes:

  • 2 large chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 medium Yukon Gold potatoes, diced into small cubes
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)

For the Garlic Parmesan Sauce:

  • 3 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese (plus extra for topping)
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon ground mustard (optional)
  • Fresh parsley, chopped, for garnish

Instructions

Sauté the potatoes.

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add diced potatoes, season with salt, pepper, and smoked paprika.
  3. Cook for 10-12 minutes, stirring occasionally, until golden brown and tender.
  4. Remove from the skillet and set aside.

Cook the chicken.

  1. Add the remaining 1 tablespoon olive oil and 1 tablespoon butter to the skillet.
  2. Add chicken pieces, season with Italian seasoning, onion powder, and red pepper flakes.
  3. Cook for 5-6 minutes, until golden brown and fully cooked.
  4. Remove from the skillet and set aside.

Make the garlic Parmesan sauce.

  1. Reduce heat to medium and add the remaining 1 tablespoon butter to the skillet.
  2. Stir in the minced garlic, sautéing for 30 seconds until fragrant.
  3. Pour in the heavy cream, Parmesan cheese, and dried thyme.
  4. Stir continuously for 2-3 minutes until the sauce thickens.

Combine everything.

  1. Return the cooked chicken and potatoes to the skillet.
  2. Toss in the garlic Parmesan sauce, coating everything evenly.
  3. Let it simmer for 2-3 minutes for the flavors to meld.

Garnish and serve.

  1. Sprinkle with extra Parmesan cheese and fresh parsley.
  2. Serve hot and enjoy!
